Bacon & Cola Crock Pot Roast Beef

I love double duty meals.  Make this great roast beef and serve with mashed potatoes night one.  Then take the left over beef and add a little bbq sauce and serve sandwiches night 2!   Such a time saver

Bacon & Cola Crock Pot Roast Beef

Serves: 4-6
 

Ingredients
  • 1 (3-4 lb) bottom round beef roast
  • 1 (12 ounce) can cream of celery or mushroom soup (whatever your preference)
  • ½ lb bacon , cooked and crumbled (reserve drippings)
  • 3 -5 tablespoons bacon drippings
  • 1 (1 ½ ounce) package dry onion soup mix
  • 1 (12 ounce) can Cola
  • 1 tbsp corn starch and 1 tbsp water mixed

Instructions
  1. Pour 1 can of Cola into your crock pot and set temperature to low.
  2. Place your Beef Roast in the crock pot and sprinkle the Dry Onion Soup mix over roast and the cola
  3. While cooking the roast on low, fry the bacon to a crisp, crumble it and set aside.
  4. Pour the bacon drippings from cooking the bacon and drizzle them over your roast.
  5. Spread the bacon crumbles over your roast and dry onion soup mix.
  6. Cover roast and cook on low for 6-8 hours, or 4-6 hours on high.
  7. One hour before roast is to be served make your gravy.
  8. Lift roast out of crock pot and set aside.
  9. Add your one can of Cream of Celery soup and hand whisk until blended. For time’s sake I use the electric mixer.
  10. Add corn starch and water mix and whisk in to thicken.
  11. Place your roast back into the crock pot and finish out your cooking time.
  12. Serve your roast with gravy over mashed potatoes.

  2. Can you throw the roast into the crock pot frozen or should you thaw it first?

      u can throw it in frozen. lots of recipes call for u to brown it first but i never do…it always tastes good to me!

  3. I made this over the weekend (with pork) and it was AMAZING. Leftovers became a ‘stroganoff’ with egg noodles because I couldn’t ruin the yummy sauce with bbq. :-)

  5. This was a HUGE hit at our house!!!! YUM!!!!! The bacon is the secret weapon for sure. I measured my drippings becase it seemed like I had a lot in the pan and used 3T and there really wasn’t a lot more. Definately don’t skip out on the bacon.

  6. Husband and daughter loved the recipe as did I. It will now be our go-to roast recipe. I agree the bacon is what makes it. Very simple and very yummy!!!
