Ground Beef & Italian Sausage: I love using both. The sausage adds so much flavor and makes the soup taste more like a really good lasagna. You can use all ground beef if that is what you have on hand.

Onion & Garlic: These cook with the meat before going into the slow cooker and give the soup a great flavor base.

Crushed & Diced Tomatoes: Using both gives you a rich tomato broth while still leaving some texture in the soup.

Vegetable Juice: Regular V8-style vegetable juice works perfectly here. It adds a little extra tomato and vegetable flavor to the broth.

Beef Broth: This turns our tomato and meat mixture into soup while adding plenty of savory flavor.

Italian Seasoning: An easy way to add those classic Italian herbs without measuring several different seasonings.

Lasagna Noodles: Regular dried lasagna noodles are perfect. Just break them into smaller, spoon-friendly pieces before adding them to the Crockpot.

Ricotta, Mozzarella & Parmesan: Don’t skip the cheese! Adding it to each bowl at serving time is what really gives this soup that lasagna flavor.

This is best in a 5 quart or larger crockpot.

How to Make Lasagna Soup in the Crockpot

Start by browning the ground beef and Italian sausage with the onion and garlic. Drain away any excess grease.

Note: This step is something you could do ahead of time on a meal prep day and refrigerate or freeze until ready to assemble.

Add the cooked meat mixture to your slow cooker along with the tomatoes, vegetable juice, beef broth, and seasonings. Give everything a good stir.

Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

Don’t Add the Lasagna Noodles Too Early

This is the one part of the recipe where timing matters.

Wait until about the last 30 minutes of cooking before adding the noodles. If they spend all day in the Crockpot, they’ll continue absorbing liquid and can become too soft.

Once the noodles are tender, your soup is ready to serve.

Make It Ahead

Gluten-free pasta can cook a little differently depending on the brand, so start checking the noodles before the full 30 minutes is up. You want them tender, not mushy.

Storing Leftover Lasagna Soup

Store leftover lasagna soup in an airtight container in the refrigerator.

Keep in mind that the noodles will continue soaking up some of the broth while the soup sits. Your leftovers may be thicker the next day that isn’t necessarily a bad thing! You can add a splash of beef broth when reheating if you’d like to loosen it back up.

  • 1 tablespoons olive oil
  • ½ pound ground beef lean
  • ½ pound Italian sausage
  • 4 cloves garlic minced
  • ½ cup onion diced
  • 4 cups beef broth
  • 1 cup vegetable juice
  • 28 oz crushed tomatoes , undrained (canned)
  • 15 oz diced tomatoes canned
  • 6-8 dry lasagna noodles broken into small pieces
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

Toppings

  • Ricotta cheese
  • Mozzarella cheese
  • Shredded parmesan
  • Fresh parsley
  • Fresh basil

Instructions

  • In a large skillet over medium high heat, heat olive oil, and cook ground beef and Italian sausage until half way done, about 3-4 minutes
  • Add in garlic and onion and continue to cook until the meat is cooked through, drain grease
  • Put mixture into crockpot and add in tomatoes, beef broth, vegetable juice, Italian seasoning, salt and pepper
  • Cover and cook on low for 6-7 hours or on high for 4-5 hours
  • Add in pasta and cook for an additional 30 minutes or until pasta is tender, season with extra salt and pepper if needed
  • To serve, top with cheese, parsley or basil and enjoy
  • Store leftovers in refrigerator

    Excellent! I didn’t have sausage so I used 1 pound of beef. Turned out beautifully! Served in a bowl with 1/4 c part-skim ricotta and sprinkled parmesan. Will make again!
