Crockpot Lasagna Soup Recipe

Sometimes I am just looking for something different to serve my family for dinner. Familiar flavors are great because it gets them out of the usual without pushing them too far out of their comfort zone. That is why I love this Crockpot Lasagna Soup Recipe! It does just that. This warm, hearty soup is full of the classic lasagna flavors that everyone loves.

Ingredients

Crockpot Lasagna Soup ingredients

This is best in a 5 quart or larger crockpot. To make this soup all you need is…

  • Ground beef
  • italian sausage
  • garlic 
  • onion 
  • beef broth
  • olive oil
  • dry lasagna noodles
  • vegetable juice
  • crushed tomatoes canned
  • diced tomatoes canned
  • Italian seasoning
  • Salt
  • Pepper

How To

In a large skillet over medium high heat, heat olive oil, and cook ground beef and Italian sausage until half way done, about 3-4 minutes

Add in garlic and onion and continue to cook until the meat is cooked through, drain grease. Then add the meat to your crockpot.

Note: This step is something you could do ahead of time on a meal prep day and refrigerate or freeze until ready to assemble.

In your crockpot add in tomatoes, beef broth, vegetable juice, Italian seasoning, salt and pepper. Cover and cook on low for 6 -7 hours or high for 4-5 hours.

Add in pasta and cook for an additional 30 minutes or until pasta is tender, season with extra salt and pepper if needed.

To make this dish simply use gluten free lasagna noodles. Also double check your other ingredients to ensure that they are gluten free.

  • ½ pound ground beef lean
  • ½ pound Italian sausage
  • 4 cloves garlic minced
  • ½ cup onion diced
  • 4 cups beef broth
  • 1 cup vegetable juice
  • 28 oz crushed tomatoes , undrained (canned)
  • 15 oz diced tomatoes canned
  • 6-8 dry lasagna noodles broken into small pieces
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

Toppings

  • Ricotta cheese
  • Mozzarella cheese
  • Shredded parmesan
  • Fresh parsley
  • Fresh basil

Instructions

  • To serve, top with cheese, parsley or basil and enjoy
  • Store leftovers in refrigerator

    Excellent! I didn’t have sausage so I used 1 pound of beef. Turned out beautifully! Served in a bowl with 1/4 c part-skim ricotta and sprinkled parmesan. Will make again!
