Sometimes all you need is 5 minutes in the morning to make dinner happen when you come home. That is a lifesaver! This simple Crockpot Beef Taquitos Recipe is a fast and simple dinner to throw together for those super busy days!

I have used stew meat, but this time I used a beef roast I had. You are just cooking it until it falls apart so either one works great! Once the beef is in the crockpot top with a packet of taco seasoning or some of this tasty Homemade Taco Seasoning.  Cover and cook on low for 6 -8 hours.

30 Minutes before serving open the crockpot and shred the beef. Open a can of refried beans and stir them in with the shredded beef. Cover again just so the beef/bean mix gets warm. This should only take a few minutes

You can use either corn or flour soft taco tortillas. Lay out the tortillas one at a time then spoon shredded beef into the center of the tortillas. Roll tightly. (This step is so easy, even kids can help.) Then place on a parchment-lined baking sheet. Spray generously with olive oil spray.

Bake for 8 – 10 minutes or until the tortillas are crisp.

*Note* Corn tortillas tend to crack easier. Spray them with a little olive oil spray before you fill them.

Crockpot Beef Taquitos

Ingredients

  • 2 lbs chuck roast or stew meat
  • 1 pkt taco seasoning
  • 1 can refried beans
  • Small Flour Tortillas
  • Olive Oil Cooking Spray
  • Taco Toppings { Sour Cream Guacamole, Cheese, etc. }

Instructions

  • Place the beef in your crockpot and top with taco seasoning. Cover and cook on low for 6-8 hours or high for 3-4 hours. 
  • Remove the lid and shred the beef. Once shredded stir in the refried beans and recover to heat through. 
  • Preheat the oven to 400 degrees F.
  • Add some the meat mixture to the center of each tortilla and roll them up tightly. Place on a parchment lined baking sheet. Once you baking sheet is filled spray the taquitos with some olive oil cooking spray. Bake for 8-10 minutes or until the tortillas start to get crispy.
  • Serve with your favorite taco toppings. 

Notes

Gluten Free

Use a gluten free tortilla. These do tend to crack easier so you may want to brush them with a little olive oil before you fill them.
