Crockpot Cajun Sausage & Quinoa

The real ingredients in this Crockpot Cajun Sausage & Quinoa Recipe are so full of flavor, you will want to make it every day of the week! Even those days when you just don’t fee like cooking. It’s time to bring sausage to the dinner table.
I ran into Publix this week and found this Aidells® Cajun Style Andouille Sausage. It definitely caught my eye because it is gluten free, has not nitrites, and is all natural! It is important to me to know exactly what I am feeding my family!
You guys!! This recipe is so easy! You can really make this any night of the week! I just put the quinoa, peppers, onions, and diced Aidells® Cajun Style Andouille Sausage right in the crockpot. I sprinkled it with some cajun seasoning, but if you don’t have any don’t worry the sausage is full of enough flavor for the entire crockpot.
I topped it off with a carton of chicken broth. Put the lid on and let the stuff make your house smell heavenly on high for about 3 hours. You can also cook it on low for 5 1/2 to 6 hours. I put mine in the crockpot before I headed out the door for school pickups and dinner was ready to hit the table about 6 o’clock. PERFECT.
When it was done I gave it a stir to fluff up the quinoa and mix everything together! Oh …My …Word! If you aren’t hungry just smelling this dish, something is wrong. 🙂
The quinoa is so full of flavor from the sausage, onions, and peppers. The sausage has an amazing flavor and nice little kick to every bite! Definitely a keeper and a winner. Plus, it is good for you too!

- 1 Package Aidells® Cajun Style Andouille Sausage sliced
- 1 cup diced onion
- 1 cup diced bell pepper
- 1/4 tsp cajun seasoning
- 1 1/2 cups Quinoa
- 1 32 oz carton of Chicken Broth
Instructions
- Place all of the ingredients in a 6 qt crockpot on high for 3 hours or low for 5 1/2 - 6 hours. Stir and serve.
