Crockpot Spinach Artichoke Dip

This great appetizer has become a restaurant classic. Let it become a regular treat in your home thanks to the crockpot!
Ingredients
  • 1 pkg frozen chopped Spinach (thawed, drained)
  • 1 pkg frozen artichokes (or 14oz can) Finely Chopped
  • cup Grated Parmesan Cheese
  • Cup Light Mayo (you can use regular)
  • cup shredded mozzarella cheese
  • tsp. garlic powder

Instructions
  1. Mix all ingredients
  2. Spoon into lightly buttered 3½ quart slow cooker on HIGH for about 1 hour.
  3. Serve with cubes of crusty bread or assorted crackers.

Notes
I like to use frozen artichokes, because there is no oil or salt involved. You don’t have to drain and they are so easy to chop while still frozen. Look for them in the grocer’s freezer next to the frozen spinach.

  1. Holy crap, that was awesome. I upped the garlic (b/c that’s how I roll) and I used Duke’s mayonnaise and the hubby and I were like, Whoa. This is better than a restaurant! I prob should’ve squeezed more moisture out of the spinach after thawing it under hot water, but even so. It was outstanding!!!

  2. Dip turned out GREAT! Wonderful parmesan flavor! I doubled the recipe & used a 9×13 inch cake pan, baked it at 400 degrees for about 20-25 minutes. To save time I used my small food processor to finely chop artichokes…oh aaaand I used a clove of fresh garlic rather than garlic powder :) FRESH garlic always tastes better!

  3. Wondering if you can use fresh spinach instead of frozen?
