Apple Butter (Crockpot)

I am loving the bounty of apples all around me lately.  We took the kids to pick apples the other weekend only to find out that one of my neighbors has a couple trees.  I have been starring painfully as I watch the apples fall.  I put it on my agenda to go introduce my self this weekend, and offer to rescue some of the apples before they fall. The best part is I have never had the pleasure of making all things apple because this is the first year we have lived far enough north for them to grow.

I took full advantage of my apples and threw them in the crockpot to make a homemade batch of apple butter.  It is so amazing I am canning it for gifts! I am in love!

Serves: 4 pints
Ingredients
  • 5 1/2 pounds apples – peeled, cored and finely chopped
  • 2 cups brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
Directions
  1. Place the apples in a slow cooker. In a medium bowl, mix the sugar, cinnamon, cloves and salt. Pour the mixture over the apples in the slow cooker and mix well.
  2. Cover and cook on high 1 hour.
  3. Reduce heat to low and cook 9 to 11 hours, stirring occasionally, until the mixture is thickened and dark brown.
  4. Uncover and continue cooking on low 1 hour. Stir with a whisk, if desired, to increase smoothness.
  5. Spoon the mixture into sterile containers, cover and refrigerate or freeze.
Notes

You can also can the finished apple butter in a water bath canner. Process the jars for 10 minutes.

I only used 1 cup of sugar because the apples I had were sweet enough on their own. Feel free to taste and adjust the sugar accordingly!

What kind of apples do you suggest or use?

You can use any type of apple you have on hand. I used Honey Crisp and Jonagold because that is what we picked but any type of apple works well for this.

I made this recipe over the weekend..I am working 2 jobs right now and don’t have a lot of time and this was just perfect! The most time consuming part was getting the apples peeled and cored but I have one of those peeler/corer things that my 9 year old mastered and she helped a lot! Most of the work was in the crock pot and it smelled sooo good! I will have to make more next time as I was only able to yeild 3 quarts and I will use less sugar next time..realllly sweet..but other than that it was very yummy! Thanks and keep those time saving recipes and ideas coming!
