My family loves stuffed bell peppers. They are such a great, simple dinner option. I never imagined that they could get any easier, but the Crockpot Stuffed Pepper Soup does just that!

How to Make Crockpot Stuffed Pepper Soup

Crockpot, canned tomatoes, rice, and more

The only real prep work is browning the ground beef. If you plan ahead, you can brown ground beef in the crockpot too. Then you will have everything ready to dump and go!

Place all of the ingredients (except the rice) in your crockpot and cook on low for 6 -8 hours. About 30 minutes before serving remove the lid and stir in the rice.

By the time this soup is done the entire house smells amazing, and this soup is very filling. The whole family loved it!

What size Crockpot?

For this recipe I highly recommend a 5 quart crockpot or larger. I love to use a larger crockpot for soups. Helps make sure everything fits.

Gluten Free

This soup is a perfect gluten free meal. Everything should already be gluten free but please be sure to double check your ingredients. Especially the broth.

Storing Leftovers

Keep your leftovers in an airtight container in the fridge for up to 4-5 days. Reheat in the microwave or in a pot on the stove over medium/low heat.

Equipment

Ingredients

  • 2 lbs ground beef
  • 2 green bell peppers diced ( about 1 cup)
  • 30 oz diced tomatoes 2 cans; undrained
  • 15 oz tomato sauce
  • 32 oz beef broth
  • 1 cup water
  • 1 small onion diced
  • 2 tablespoons brown sugar
  • 3-4 cloves garlic minced
  • 2 tsp salt
  • 1 tsp pepper
  • 2 cups cooked rice

Instructions

  • Brown and drain grease from the ground beef and place in slow cooker.
  • Add in tomato sauce, tomatoes, broth, peppers, onions, garlic, brown sugar, water, salt and pepper to slow cooker. (basically everything but your cooked rice) Cover and cook on low 6-8 hours.
  • When about 30 minutes are left , add in your cooked rice, recover and continue cooking until time is up.

    I made this last night and it is sooooo good! I used a yellow, orange, and red pepper to make it pretty 🙂 And I was worried the strength of the green pepper would be too much for me; I’m a wimp. This is the perfect soup for me to pack in this weeks lunches. Thank you!

    I made this recipe and it was delicious. The flavors were wonderful. I only changed a few things…I used ground turkey instead of beef and chicken broth instead of beef broth and I added a teaspoon of Italian seasoning. I also served my rice separately instead of adding it to the soup. Simply delicious.

  5. This was very good. I served it over rice instead of putting the rice in the soup. A few days later as a leftover meal I served it over baked potatoes! It was fantastic!

    This was excellent! I followed recipe except only had 1 lb of meat. It definitely needs 2 to thicken it up. I will make sure to do that next time! But great flavor! Thank you

    Made this yesterday and we loved it!!!
    Was easy to make. I did make a cornbread to have with it. The recipe made a larger quantity then I needed but we will enjoy the leftovers.

      I made this yesterday and it was outstanding! I will definitely make this often. Since I didn’t start it until after 1:00, I used my Crock-Pot like a stove top to get it going quicker. Then I turned on the Crock-Pot mode to high. I also used ground turkey and 93% lean ground beef. Instead of water I used beef broth. I also had the boil in a bag rice which is partially already cooked. I dumped one bag in one hour before the soup was ready. This was an awesome recipe thank you for sharing!

    This soup was the best bell pepper soup I’ve ever had! I used red, yellow and green peppers and omitted the rice. Waiting 6-8 hrs for simmering didn’t work that day so I simmered it on the cooktop for about an hr and it was delicious.

    Easy to make but definitely needs some seasoning. I followed the recipe this time since it had so many good reviews. But it needs more flavor. I would add taco seasoning or something next time.

    I made this with rice cauliflower and very good. I agree it needs more seasoning so more pepper worked ! I would like to know how much a serving is. You have everything listed but serving size. Thanks, I will make this again !

      This was delicious! My fiancé and I loved it. However, the next day I opened the fridge to eat it as leftovers and the rice absorbed all of the liquid. We decided the next time we make it we will keep the cooked rice in a separate dish and add it to each individual serving as desired.

    Simple, tasty recipe. Made it tonight & everyone really liked it. Ate so much I gave myself a stomach ache—oops! But not the recipe’s fault I couldn’t control myself. Makes a big batch. I kept the rice separate and just ladled the soup over rice in serving bowls so I could freeze the leftovers without the rice absorbing too much liquid and disintegrating. Awesome recipe that will definitely go into my winter soups rotation.
