When your day doesn’t go quite as planned it is nice to have control over something. Just knowing that this Simple Crockpot Pork Tenderloin & Vegetables take only minutes to throw together and need no special attention is a miracle on a busy day.
I honestly had no intentions of sharing this recipe. This morning I was so frazzled that it was almost noon by the time I threw this in the crockpot. I had done similar roasts before but this was a little bit of this and a little bit of that so we would have dinner tonight. I decided to share what I was doing on my Instagram Story. It turned out SO WELL I knew I had to post it for all of you.
I diced some potatoes, carrots, celery, and onions and tossed them with some olive oil and threw them right in my crockpot. I used the biggest crockpot I have (6 qt) for this one because I knew my pork tenderloin was large. You can use a smaller one, or even use fewer veggies if you have a smaller family.
I placed the pork tenderloin right on top of the veggies. I drizzled it with a little olive oil and sprinkled it with salt, pepper, oregano, and garlic. Cover and cook on high for 4-6 hours depending on the size of the tenderloin mine was large so I went for the 6 hours. Use a meat thermometer to double check the internal temperature of your roast to ensure it is cooked thoroughly. You can also cook on low for 8-10 hours. This is great if you have to be out of the house all day.
Now I put the roast on top of the veggies for a couple reasons. The vegetables soften with the juices from the pork and get a ton of flavor. I wanted to slice my pork roast into chop like portions. By cooking it like this it didn’t fall apart as easily but was still super tender. This allowed me to slice it without any problems.
I did such a large Crockpot Pork Tenderloin that I only cut half of it up for dinner tonight. I saved the other half and put it in the fridge to slice up and serve with bbq sauce for sandwiches another night this week. I love a two for one!
Tonight we did the Crockpot Pork Tenderloin sliced into chops with the roasted vegetables and a side salad.
It turned out moist, and full of flavor. Not a peep was heard throughout dinner and everyone enjoyed! That is a winner in my book!
Simple Crockpot Pork Tenderloin and Vegetables

- 1 Boneless Pork Tenderloin 3 – 4 lbs
- 2 tablespoons Olive Oil
- 3 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 1 tablespoons minced garlic
- 1/2 tsp dried oregano
- salt and pepper
Instructions
- Toss potatoes, carrots, celery, and onion in a bowl with 1 – 2 tbsp of olive oil and a little salt and pepper. Stir to coat. Dump into a large crockpot.
- Place Pork tenderloin on top of vegetables. Drizzle with another 1 -2 tbsp of olive oil top with garlic, oregano, salt, and pepper.
- Cover and cook on high for 5-6 hours depending on the size of roast or low for 8 -10 hours.
- Use a meat thermometer to ensure the pork tenderloin is done before serving. Serve with veggies and a side salad.
Questions for a first-timer: (78 year old 1st timer)
1. I’d like to use Italian dressing to toss vegetables. Okay,
or just stick with olive oil?
2. Will chicken broth help or hurt if I add to slow cooker?
