Crockpot Shredded Chicken Recipe – Perfect for Meal Prep

Crockpot Shredded Chicken Recipe

I try to hit the grocery store only once a week. This not only helps me not be at the store everyday, but forces me to do a bit of meal planning. When I find a good deal on chicken breasts, I buy an extra pack and make this Crockpot Shredded Chicken. This simple recipe can be turned into several meals and makes life so much easier!

How to Make Crockpot Shredded Chicken

This recipe isn’t fascinating or full of ingredients. In fact, it’s pretty simple. It does make your dinner prep so much easier later in the week though.

Chicken breasts in crockpot

In your crockpot (I used a 6 qt slow cooker), place boneless skinless chicken breasts, chicken broth, and some seasoning of your choice. I love using this Chicken Dry Rub!  Cover and cook on low for 6-7 hours or high for 3 hours.

When you chicken is cooked through, shred it with two forks.

Shredding Tip

You can skip the forks and use a hand held mixer on a low speed. Your chicken will be shredded perfectly and quickly!

This is my favorite part! This is just perfectly lightly seasoned cooked chicken. You can use it in ANY recipe that uses chicken. Talk about making meal prep easy! Some of my favorite ways to use it are…

Can you freeze it?

Yes you can! You can take your cooked shredded chicken and place it in freezer bags. Then, when you are ready to mix it in to a recipe or use it, just thaw and heat. It is that simple. You can keep it in your freezer for about 4 months without it loosing its quality.

Great for Keto

If you are eating Keto, or low carb, this recipe is perfect to help you meal prep for the week. The chicken in straight protein and great to top with cheese or serve with veggies for a quick meal. It is so helpful to have the chicken already cooked and ready to go.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 1/2 tsp chicken rub (or seasoning salt)

Instructions

  • Place chicken breasts into a 4qt or larger crockpot.
  • Pour chicken broth over the chicken, and sprinkle with seasoning.
  • Cover and cook on low for 6 hours or high for 3 hours.
  • Shred with a fork and enjoy.
